In the midst of a kitchen challenge – limited flour but a ton of inspiration – I stumbled upon a culinary gem! With just some chicken, eggs, and a hint of magic from my pantry, I created a mouthwatering masterpiece.
I took 2 chicken breasts and transformed them into 40 bite-sized pieces of heaven. 🐔🌟
My secret? A perfectly seasoned egg bath with a dash of salt, pepper, garlic, onion, and paprika. Then, the real game-changer: a blend of flour and garlic & herb potato flakes, kicked up with Cajun seasoning and a sprinkle of love. 😍🥔
The result? Crispy, flavorful chicken that's pure perfection. 🍽️✨

Love (as much as you'd like)
Instructions:
Start by preparing the chicken:
Cut the chicken breasts into small, chip-sized pieces. You mentioned about 40 pieces, but you can adjust the quantity as needed.
Prepare the egg mixture:
In a bowl, crack the eggs and beat them until well combined.
Add half of the salt, half of the black pepper, garlic powder, onion powder, paprika, and Cajun seasoning to the beaten eggs. Mix thoroughly.
Prepare the coating mixture:
In another bowl, combine the potato flakes and flour.
Season this mixture with the remaining half of the salt, half of the black pepper, paprika, and Cajun seasoning. Mix well.
Dredge the chicken:
Dip each piece of chicken into the seasoned egg mixture, ensuring it's well coated.
Then, roll the chicken in the potato flake and flour mixture until it's evenly coated. Press the coating onto the chicken pieces to make it stick.
Heat the oil:
In a deep skillet or a frying pan, heat about 2 inches of cooking oil over medium-high heat to around 350°F (175°C).
Fry the chicken:
Carefully place the coated chicken pieces into the hot oil. Fry in batches, if necessary, to avoid overcrowding the pan.
Fry for about 3-4 minutes per side, or until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (74°C).
Drain and serve:
Use a slotted spoon or tongs to remove the fried chicken from the oil and place them on a paper towel-lined plate to drain any excess oil.
Serve hot:
Your delicious, crispy, and flavorful chicken is ready to serve. Enjoy it with your favorite dipping sauces or sides.

Feel free to adjust the seasonings to your taste preferences, and remember to exercise caution when working with hot oil. Enjoy your homemade culinary delicacy!
